Welsh Rarebit with Mermaid Confetti

Welsh Rarebit with Mermaid Confetti Vegetarian

Classic Welsh rarebit made with traditional stout or milk, served with a sprinkling of our Mermaids Confetti.


  1. Melt the butter in a saucepan and stir in flour. slowly cook over a low heat for 60 seconds
  2. stir constantly
  3. add the stout or milk and bring to a simmer for 3 minutes. keep stirring until thick and smooth
  4. Add the cheese, bay leaf, mustard, Worcestershire sauce, paprika, pepper and Mermaid Confetti
  5. cook until the cheese melts and you have a beautiful full smooth hot cheesy sauce
  6. toast the bread and then smooth the cheese sauce all over
  7. place under a grill for 30 seconds until you have a lovely golden colour


  • 25g Salted Butter
  • 25g Plain Flour
  • 100ml of Stout or Milk
  • 150g Mature Cheddar Cheese, Grated
  • 1tsp English Mustard
  • 1 Bay Leaf
  • 4tsp Worcestershire Sauce
  • Pinch of Paprika
  • Pinch of White Pepper
  • 4 Slices of Bread
  • 1 or 2 Sprinkles of Mermaid Confetti
